Fruit Salad for Rhumatory Arthritis

no dialogue] ♪♪. Hi, my name is Jenny Beyers. I’m a graduate dietetics student
at Eastern Illinois University. Today, i’m going to be talking
to you a little bit about rheumatoid arthritis. Rheumatoid arthritis is a
chronic disease characterized by the inflammation of the lining
of the joints commonly in the fingers, hands, and wrists. It affects about 1.3 million
Americans usually commonly between the ages of
30 and 50. At this time there is no
known cause for the disease. It can lead to long-term joint
damage which then results in chronic pain, loss of function,
and also disabilities. So it’s important to prevent
the disease and, also, if you do become diagnosed
with it to treat it early. While there is no known cure at
this time, it’s easier than ever to control the symptoms
through new medications, excercise, joint therapy
techniques, stress management techniques, and also diet. I’m going to be giving you a
few dietary recommendations that you can incorporate
into your diet to alleviate some of the symptoms associated
with rheumatoid arthritis if you are diagnosed
with the disease. So the first one is to eat
a variety of foods and drink plenty of fluids
throughout the day. The second one is to balance
intake with physical activity. The third one is to maintain
a low-fat diet, incoporate lots of whole grains and
also fruits and vegetables that are high in antioxidants
such as apples, oranges, blueberries, Brussel
sprouts, and also spinach. People with rheumatoid arthritis
have been found to be low in vitamin E, so it’s important
to maintain a good source of this and you could find
that in kiwi fruits, nuts, and dark leafy vegetables. Then another recommendation is
to maintain an adequate amount of Omega-3 fatty acids
to your diet. These play a role in the
inflammatory pathway in your body. So it will aleviate some of
the symptoms of inflammation. The last recommendation would
be to avoid or consume less of certain dairy products,
processed meats, red meats, and then also alcohol. So now I’m going to put together
a recipe of some of the recommendations, add some of
those foods in there so you can try this at home. So first what you would do
is you take one whole apple that’s chopped up and put it
in a bowl with a pear. Then you take two kiwis that
have been chopped up and then a cup of strawberries
that have been quartered and then one papaya. You would remove the skin, chop
it up, and also remove the seeds and hold onto those because that
would be put into the dressing. So for the dressing, we’re
going to take a 1/2 cup of plain low-fat frozen yogurt and
you put this in a blender. Then you put the papaya seeds
into the blender with that. Then we want 1 tablespoon
of honey. Okay, then just a dash
of salt, so you just put a little pinch in there. Then you would want to
blend that altogether. Whirrrr. Then also add some lemon juice
and then 1 tablespoon of extra virgin olive oil. Okay, then mix that
together again. Whirrrr. Okay, and then you just
pour this over the top and mix it all together. This would be great to use as a
side dish or even just a snack and it incorporates a lot of
those foods that I gave you for the recommendations. So I hope you learned a lot
