  7. For mash: you'll need, a good half glas of milk, salted butter (a chunk), an egg yolk, salt, indian powder pepper, and chestnut (fresly rasped). First when potato is dry and real hot start working your potatoes with a masher. Scoop the edges with a spoon so that all potato is mashed. Then make a pit in the mash and do COLD milk in it. Lay your yolk in that pit. Season generously with salt, pepper and nutmeg. Start working the mash, do some extra milk, until desired consistency is achieved. Then join the COLD butter and work it quickly under. Put your pot back on the hot fire now cooling down and give it a stir. At choice, scoop the mash in a oven shale, decorate with a fork and grill for 5 minutes until crusted. The whole process of making mash can only take a minute or two.Otherwise you are standing dreaming there…Bon appetit.

  11. I literally make my potatoes so simply…all I do is peel and boil my potatoes, then I mash them with the water they were cooked in, and at the end I add a chunk of butter and a bunch of salt. Top with caramelized onions or mushrooms if I’m feeling it.

    Never herd about heavy cream in purée, will have to try that combination!!! 👍
