First Course. An amuse-bouche of mechanically reclaimed
chicken, encased in a light crispy coating. Accompanied by a 2013
Meursault Les Clous. Immature, with notes of
white flowers & apricots. Adding complexity to
the batter finish. Southern inspired chicken
gravy reduction. Served with a self assured
Les Deux sherry. Pairing rich, piquant aromas
with a luxurious texture. A flattering style with an off dry focus,
and zip on the finish. Alaskan pollock, coated in breadcrumbs, with cheese
and a warm tangy tartar dressing. Paired beautifully with Sancerre.
Pale yellow with green tints. The almost impossibly plump brioche
crumbles delicately on the palette, complimenting the distinctive nose of grapefruit, blackcurrant bud, and white fruit. Turkish rotisserie lamb,
served with a white pitta. Accompanied by chilli jus
and a garlic aioli. Dressed with Amarone. Sumptuous hints of liquorice,
leather and dusty wood, a blissful sensory experience. We close with a rich nougat, enveloped in
sweet caramel and encased in chocolate. Flash fried in a light batter. Coupled with Tokaji. Intense
and lightly sweet. Dried orange, warm
tobacco and pineapple. Accentuating the soft reassuring taste of cocoa,
and bringing refreshment. The perfect finish.
