Keto Bacon Cheeseburger Soup

– Today on Low Carb with Jennifer, I’m going to show you how to make this delicious and easy
keto cheeseburger soup. So hey guys, I’m Jennifer Banz, and I help home cooks make keto meals the whole family will love. Today we’re making this cheeseburger soup, and it is super simple and so delicious. It’s literally like eating a
cheeseburger, I’m not kidding. So I’m cooking a pound
of ground beef here, and we’re going to cook
it until it’s cooked all the way through. I’m also going to add in some onion. I like to use frozen onion just for simplicity and easiness. I just love to get a
package of frozen onion out of the freezer instead
of chopping an onion and it making me cry. So I’m going to season
this with some salt. So we’re going to cook this hamburger meat until it’s cooked all the way through, and then we can continue on with our soup. Okay, our hamburger’s
cooked all the way through, and now we are going to
add in some cream cheese. We’ve got an eight ounce
block of cream cheese, and we’re going to add it
to the meat and stir it in. It’s going to melt into the meat and it just makes it a lot easier to add this to the meat first before you add the liquid ingredients. It’s just easier to
incorporate into the soup. I’m going to also add some tomato paste. You can’t have a delicious
cheeseburger without tomato. So we’re going to stir this all in. Our cream cheese is incorporated. So now we’re going to
add in our beef broth. (broth pours) The soup is almost ready. I’m also going to add in cheddar cheese, and this is going to thicken it up and bring it all together. And I can’t wait to show you
our toppings for the top. First, let me melt in this cheddar. You want to keep the heat on a low setting when you’re melting in this cheese. If you do it too hot, the cheese is just going to
sink to the bottom of the pot. Okay, our soup is ready to go. It looks perfect. So I’m going to ladle
some of it into this bowl and make a mess. And now I’ve got some chopped up pickles. These are called, I dunno,
mini pickles, cornichons, whatever you want to call ’em. And I like to put some of those on top. And then I’ve also gt some
crispy bacon for the top. And just like that, you have a delicious cheeseburger soup. Check out these other videos

  2. Looks like a quick easy lunch! I try to keep containers of browned hamburg in the freezer so meals like this are super easy to throw together. (I have 7 containers in there, now!) The toppings sound good! Thanks for sharing!
